Roasted Asparagus

This is a recipe I learned from my neighbor, Michelle. It's simple, delicious and relatively healthy. It dresses up a meal with a minimum of effort and, as long as asparagus is on sale, a minimum of expense. Even the non-asparagus lovers in our family enjoyed it.

Roasted Asparagus
1-2 pounds asparagus
1-2 tablespoons olive oil
Salt and pepper to taste
2-3 tablespoons grated parmesan cheese

Preheat the oven to 400 degrees. Wash and trim the asparagus. Toss it in a large bowl with the olive oil. Sprinkle it with fresh ground salt and pepper. Bake in the oven for 15 minutes. Remove from the oven and sprinkle with parmesan cheese. Return to the oven for about one minute, until cheese is melted. Serve immediately.

  1. I have never thought of Steve as being a picky eater but, as I go through your recipes, I see several thing that I think would be great but that Steve wouldn't like (mainly vegetables). Maybe I'll just have to broaden his horizens. The problem probably stems from a family who considers lettuce rabbit food and the only really used vegetable is corn. I think I'll go but some asparagus. Laura

  2. Yes, I made this on Sunday and had planned to have an alternative vegetable for those who don't care for asparagus. At the end of the meal, Sara, who had turned down my offer of asparagus earlier, said, "I think I'd like to try it." She had disliked it without ever eating it before.

    I think asparagus is on sale at Sunflower this week.

  3. Asparagus is also divine on the BBQ grill. Prepared in a similar manner with OO and S/P then grilled...yum!
